These crispy air fryer sweet potato jackets with Greek yogurt are a quick, healthy vegetarian dinner idea easy to make, delicious, and family-friendly.

Ingredients

  • 1 medium sweet potato
  • 1 tablespoon olive oil
  • 1/2 teaspoon paprika
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/3 teaspoon black pepper
  • 1 cup Greek yogurt (or a dairy-free alternative)

Instructions

  1. Preheat the air fryer to 400°F (200°C).

  2. Prep the sweet potato: Wash and pierce the sweet potato several times with a fork to allow steam to escape. Rub the potato with olive oil, paprika, dried basil, salt, and pepper until evenly coated.

  3. Air fry: Place the sweet potato in the air fryer basket and cook for 30–40 minutes, or until tender inside and crispy on the outside.

  4. Assemble the jackets: Remove from the air fryer and let cool slightly. Cut the sweet potato in half lengthwise to create two “jackets.”

  5. Top & serve: Add a generous dollop of Greek yogurt on each half and garnish with a sprinkle of salt, pepper, and basil if desired.

 

👉 Time-saving tip: For faster cooking, you can cut the sweet potato in half before air frying, which can shave off about 5–10 minutes of cook time.
