Ingredients

  • 1 head broccoli, chopped
  • 1 carrot, grated
  • 1 potato, diced
  • 2 1/2 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat. Add the minced garlic and sauté until fragrant.
  2. Pour in the heavy cream and bring to a simmer.
  3. Add the vegetable or chicken broth and bring to a simmer.
  4. Add the broccoli, potato, and carrot. Cook for 25–30 minutes, until the vegetables are tender.
  5. Stir in the shredded cheddar cheese until melted and creamy.
  6. Season with salt and pepper to taste.
  7. Serve hot, topped with extra cheese if desired.
