Crunchy Chickpeas Snack

Ingredients

  • 2 can chickpeas
  • 2 tbsp olive oil
  • 1 tbsp smoked paprika
  • ½ tsp salt
  • 1 tbsp lemon juice to garnish

Instructions

  • 1.    Preheat oven to 400 degrees Fahrenheit
  • 2.    Whisk in a medium bowl oil, smoked paprika and salt.
  • 3.    Add chickpeas and stir to coat with the spiced oil.
  • 4.    Set chickpeas in a baking sheet and spread more smoked paprika on top (optional).
  • 5.    Roast the chickpeas for 20 to 30 minutes. Roast, stirring the chickpeas or shaking the pan every 10 minutes. The chickpeas are done when golden and slightly darkened, dry and crispy on the outside, and soft in the middle, 20 to 30 minutes total.
  • 6.  Sprinkle the lemon juice on top of the chickpeas and toss to coat.
  • 7.  Serve the chickpeas hot or at room temperature. They can be stored in an airtight container for up to 3 days.
  • This recipe makes a delicious and satisfying snack that is full of protein and fiber. The smoked paprika gives the chickpeas a rich, smoky flavor, and the lemon juice adds a bright, tangy finish.
