1 can tomato paste
1 onion, diced
3 cloves garlic, sliced
1 teaspoon chili powder
1 teaspoon cumin
1 teaspoon paprika
1 1/2 teaspoons salt
2 teaspoons brown sugar
1 teaspoon black pepper
Soak the pinto beans overnight in 8 cups of water.
Drain and rinse well.
Place the pinto beans in a dutch oven or stockpot and cover with water up to your second knuckle.
Cover and cook over low heat for 1 1/2 hours.
Place all of the seasoning and brown sugar in a small bowl and whisk to combine.
Stir in the tomato paste, onion, garlic and seasoning.
Add 1-2 cups more water.
Cover and continue to cook up to 1 1/2 more hours, checking and stirring occasionally to prevent burning.
You can serve as-is or mash the beans up before serving.
(1 cup of water is enough but if you want mushier beans, add 2 cups.)
